These Avocado Floats are not only SUPER healthy but also easy to make. PLUS, they will totally satisfy your hunger at least til lunch (or dinner). Avocados are full of healthy fats and soooo good for you. Serve with a spoon instead of chips for a much healthier punch. But you know, no one is watching sooo :-). Oh and WITHOUT the chips (that you aren’t gonna eat anyway, right?), this is gluten free and looks like vegan too! WOOP!
1 small avocado
8-10 cherry tomatoes
1/8 white onion (red works too)
Slice avocado in 1/2 and set aside. You “could” scoop it with a large scoop to separate it from the skin for easier eating later but leave it in the skin so it’s easier to handle and serve. Chop ingredients up and mix well, sprinkle with lime and salt to taste. Scoop on top of each avocado and serve! Optional: chill for 15 minutes before serving. Enjoy!
