Organic Tomato Omelet

This is a nice high protein breakfast. Sometimes I drink my Vi shake with this too which adds 12 grams! 20g protein, 6g fiber, 24 carbs, 2g sugar.

Ingredients:

2 Organic cage free eggs
1 Organic medium tomato (sliced)
1/4 Organic large avocado (or 1/2 of a small or medium one)
1/3 can organic low sodium black beans (rinsed and drained)
Sea salt

Directions:

Make omelet with eggs in small pan
About 2 minutes into heating, add sliced tomato to cover top (apprx 4 slices), add salt on top
When bottom feels firm, use small plate to cover pan and flip it over and heat the tomato side til done (2-3 minutes)
Drain and rinse can of beans well til water runs clear. Heat beans in microwave on a plate (save rest of can in sealable container in microwave).
Slice avocado, save unused in airtight saran wrap in fridge
Serve all together, salt to taste and enjoy!
