Simple and Healthy Chicken Fajitas

This easy crockpot meal has become a favorite in da house! I even used organic, non-gmo tortillas and also Pita bread (cuz we run out of tortillas – it happens). Yeah, who knew they’d be tasty right? I try not to share too many details until AFTER they eat. LOL. The less they know the more they eat! This is a super easy meal to make and you can also make this vegetarian style (my husband is vegetarian – see the 2nd picture). I will share the option below in the recipe.

Ingredients (organic selection is optional):

Crockpot (YES!) – Optionally, you can saute the chicken strips.
1.5 lbs organic chicken breasts (5-6 servings)
1 cup vegetable broth (can use water but this option makes it super tasty)
1 organic red pepper
1 organic green pepper
1/4 organic white onion
1-2 medium cloves of garlic
1 T virgin olive oil
6 Organic tortillas (I use tortilla factory organic wheat non-gmo – Costco) OR pita bread if your family is picky or you only have 5 tortillas left lol. Note pita is NOT as healthy.
1/2 cup shredded colby jack (roughly to cover toppings)
Guacamole (I also get this from Costco in the little square containers)
Sea salt & garlic/parsley salt


When you wake up, throw the chicken breasts (can be one from frozen) in the crockpot with a bit of sea salt and sprinkle with garlic/parsley. Add the broth (or water). Set on slow cooking for 6 hours (if breasts are frozen, add about 1 1/2 hours to cooking time). Leave and go about your day, work, yoga, sleeping, blogging… whatever you do!

When ready to make dinner, mince the garlic and cut up onion in tiny pieces. Cut up the peppers in strips and set aside. Saute garlic and onion together in the olive oil until onion looks slightly golden (like 3-4 minutes on medium heat). Add peppers. Sprinkle with some sea salt and saute to desired doneness. I like mine well done.

Take chicken out of the crockpot and carefully turn it into strips or smaller pieces of chicken. I put on a plate and add a bit of the broth on top to keep it moist. Serve tortillas warm (12-15 seconds in the microwave will do it) and let everyone top their own with veggies, salsa, guac & cheese. Or if you want to do it for them, go for it!
